Scrambled Egg Omelet in a Pie Pan
Baked-Denver-Omelet-Breakfast-Casserole-
Ingredients:
  • 4 whole eggs and 4 egg whites
  • 1 pinch of salt & black pepper
  • 1/4 tsp cayenne pepper
  • 1 handful of baby spinach
  • 1/2 chopped onion
  • 8-10 button mushrooms cut in half
  • 1 jalapeno finely sliced
  • coconut oil
Instructions
1. Preheat oven to 350 degrees.
2. Chop mushrooms and onion.
3. Whisk eggs, S&P, and garlic powder together.
4. Stir in mushrooms, onion, jalapeno, & spinach.
5. Coat pan tin with coconut oil & fill pan.
6. Bake for 20-25 minutes or until eggs are cooked through.
Spinach & Ricotta Stuffed Chicken Breast

Ingredients:​
  • 4 small chicken breasts
  • 2 cups baby spinach
  • 1 cup fat-free ricotta
  • 2 tbsp finely chopped parsley
  • 1 tsp garlic
  • Coconut oil spray
  • Salt and pepper
Instructions:​
1. Heat oven to 400 degrees and line a tray with baking paper.
2. Place your spinach in a bowl with boiling water. Allow to sit for one minute before draining and rinse under cold water.
3. Squeeze out any excess water and finely chop the spinach.
4. Combine the spinach, garlic, parsley & ricotta in a bowl, add salt & pepper.
5. Take each chicken breast and cut a deep pocket into the side. Stuff with the mixture and secure with toothpick
6. Put chicken in large frying pan sprayed with coconut oil, cook until golden color.
8. Transfer chicken to baking tray and bake for 15 minutes.
9. Serve with steamed greens.

Tuna Salad

Ingredients:

  • 1 5oz can tuna

  • 1tbs lite mayo

  • 1tsp Dijon mustard

  • 2 to 3 Tbs Walden Farms chipotle dressing

  • Celery sticks

  • Onion (optional)

  • Black pepper

  • Garlic powder (optional)

Instructions:

1. Chop veggies.

2. Drain tuna well.

3. Add tuna and vegetables to a bowl along with other ingredients.

4. Mix together and enjoy!

Buffalo Chicken Strips & Salad

Ingredients:​
  • 4 small chicken breasts
  • 1/2 cup of Franks Hot Sauce
  • Lettuce
  • 2 Plum tomatoes
  • 1 Cucumber
Instructions:​
1. Heat oven to 400 degrees and line a tray with aluminum foil.
2. Slice chicken breasts to strips (thickness depends on personal preference.)
3. Pour hot sauce over chicken & mix well until fully coated.
4. Put strips on tray & bake for 45 min.
5. Cut lettuce, tomatoes, and cucumbers and place them in a  bowl together.
6. Serve strips with salad.

Creamy Mac & Cheese with Shrimp

Ingredients:​
  • WeightMedica packet of Creamy Mac & Cheese
  • 16 pre-cooked shrimp
  • Desired seasonings
Instructions:​
1. Boil water and add pasta to water.
2. Allow pasta to boil for about 15 min.
3. Drain the excess water and add the cheese and shrimp.
4. Mix well and serve.
